Restaurants, pubs, and hotels across the West Midlands are set to benefit from a new source of hospitality-trained staff with the launch of a training restaurant within a women’s prison at HMP Drake Hall, initiated by the charity The Right Course. This innovative project aims to equip participants with essential skills in the hospitality sector, thereby enhancing their employability upon release.
Industry-Standard Training for Prisoners
Founded by Fred Sirieix, the acclaimed maître d’, the newly established restaurant, ‘Flavours Unlocked’, will deliver industry-standard training and recognised qualifications. Participants will gain direct access to employment opportunities, significantly reducing the likelihood of reoffending and contributing to community safety.
The initiative is further strengthened by the involvement of leading hospitality companies, including Hilton, which has provided expert trainers and shared best practices to ensure that the training meets the highest standards. Additionally, financial support from the Government’s £1.5 million Hospitality Fund for 2026-2027, along with resources from the new Hospitality Grant Scheme, will bolster the training efforts.
A Collaborative Effort to Transform Lives
The opening of Flavours Unlocked was graced by the presence of the Minister for the Future of Work, Kate Dearden, alongside Fred Sirieix and other influential figures committed to transforming lives and enhancing hospitality businesses.
Minister Dearden remarked on the essential role of hospitality in the UK economy, emphasising the need for skilled staff to ensure the sector’s success. She praised The Right Course for its dedication to improving the lives of participants and expressed a commitment to unlocking talent across the board, allowing individuals to forge better futures for themselves and their communities.
Empowering Offenders Through Education and Employment
Catherine McKinnell, Minister for Prisons, Probation, and Reducing Reoffending, highlighted the dual purpose of prison as both punishment and a means of equipping offenders with the tools needed to leave crime behind. She stated that education and employment are crucial in this endeavour, and initiatives like The Right Course exemplify the positive outcomes achievable when prisons, charities, and businesses collaborate to support offenders in their reintegration into society.
Fred Sirieix expressed his enthusiasm for the partnership with industry leaders, noting the importance of creating an environment conducive to personal transformation. He aspires for graduates of the programme to become sought-after employees, ready to make significant contributions to their workplaces.
Hilton’s Commitment to Breaking Down Barriers
Stephen Cassidy, Senior Vice President for UK & Ireland at Hilton, reiterated the company’s mission to create opportunities and dismantle employment barriers. He stated that through the partnership with The Right Course, Flavours Unlocked is manifesting this commitment by providing practical hospitality training to women in custody, thereby offering a clearer pathway to employment.
The hospitality sector remains a vital component of the UK economy, yet it faces numerous challenges that require comprehensive solutions for sustained growth. The Right Course presents a practical avenue for addressing these challenges by cultivating a pipeline of well-trained and motivated staff, while simultaneously granting individuals with previous prison experience a second chance at life. This initiative not only reduces reoffending but also equips participants with transferable skills such as communication, customer service, and teamwork.
